I’ve been on the lookout for ways to add more veggies to meals. I used some leftovers I had in the freezer and chatGPT and my own brain to create a new-to-me recipe…Meatball Broccoli Alfredo.
Ingredients:
*1 bag frozen Italian meatballs
* 1 jar low-carb Alfredo sauce
* frozen (chopped in blender) broccoli florets
* 2–4 oz cream cheese
* Garlic powder + Italian seasoning
*shredded cheese
*bacon bits

1. Preheat oven to 375°F
2. Put frozen meatballs + broccoli in baking dish
3. Pour Alfredo sauce over everything
4. Add chunks of cream cheese
5. Sprinkle a little seasoning
6. Cover tightly with foil
👉 Bake covered for about 35–40 minutes then take out and add bacon and cheese, then bake for 15 more minutes uncovered or until cheese is melted and hot all the way through.
